Rosemary & Bacon Hash

What You Need
1 Russet Potato, Diced
2 Sprigs Fresh Rosemary, Stems Removed
1/4 Pound Bacon

What You Need To Do
1. Chop the bacon into large chunks and cook it in the skillet. Do not drain.
2. Add diced potato and rosemary, cover and cook until thoroughly soft inside and crispy on the outside. Turn occasionally to prevent burning.
3. Serve with an egg (optional)

Tips
Use sweet potatoes for a lower starch and higher protein content
