Menu: July 18-22

Yeah, I STILL have egg muffins left. I made a dozen and froze a bunch. Since I’m the only one eating them, there’s enough to last me another week. And hopefully this week I can finally get through the rest of the BBQ leftovers in the freezer. Two weeks is about my limit for re-heating frozen food. Yes, you can keep things in the freezer for much longer than that. I just don’t like to. Sorry, I forgot to publish this list Sunday 😦

Dinner: Bunless Hot Dogs With Baked Potato Chips

Tuesday, July 19
Breakfast: Beef Egg Muffins
Snack: Hummus & Veggies
Lunch: Salad With Grilled Chicken
Snack: Fruit
Dinner: Avocado Pesto With Shrimp & Noodles (See Artichoke & Herb Pesto, sub avocado for artichoke and add the juice of one lime – recipe and photos to come)

Wednesday, July 20
Breakfast: Beef Egg Muffins
Snack: Fruit and Yogurt
Lunch: Salad With Grilled Chicken
Snack: Popcorn
Dinner: Herb Butter Pollock Over Rice & Veggies

Thursday, July 21

Lunch: Salad With Grilled Chicken
Snack: Fruit
Dinner: Breakfast for dinner! Power Breakfast Hash
