Menu: July 11-15

Whenever I have leftovers, I freeze them and make a real attempt to eat them the following week for lunch. So you’ll notice leftovers in this week’s menu a lot. If you don’t have leftovers, salad with grilled chicken or any other protein you like is a good bet.

Monday, July 11
Breakfast: Beef Egg Muffins
Snack: Yogurt & Berries
Lunch: Leftover Porkchop & Sauteed Cruciferous Crunch
Snack: Popcorn
Dinner: Chicken Satay, Coconut Rice & Veggies (Cook extra chicken for Tuesday’s lunch)

Tuesday, July 12
Breakfast: Beef Egg Muffins
Snack: Hummus & Veggies
Lunch: Salad With Grilled Chicken
Snack: Orange or Apple
Dinner: California Shrimp Stacks

Wednesday, July 13
Breakfast: Beef Egg Muffins
Snack: Yogurt & Berries
Lunch: Leftover Eggplant Stacks
Snack: Popcorn
Dinner: Roasted Lemon Chicken With Potatoes & Brussels Sprouts (Save extra chicken for Thursday’s lunch and Friday’s dinner)

Thursday, July 14
Breakfast: Beef Egg Muffins
Snack: Hummus & Veggies
Lunch: Salad With Grilled Chicken
Snack: Orange or Apple
Dinner: Chimichurri Steak & Asparagus

Friday, July 15
Breakfast: Beef Egg Muffins
Snack: Yogurt & Berries
Lunch: Leftover Eggplant Stacks
Snack: Popcorn
Dinner: Artichoke Lemon Pesto Chicken Quinoa Bowls (use quinoa instead of squash)
