Revised Menu: July 5-8

 

We had so much fruit, veggies and meat left over from our Fourth of July BBQ (I won’t even mention all the chips, which I will not be eating) that I needed to revise the remaining menu for the week. I hate letting food go to waste.

Tuesday, July 5
Breakfast: Nonfat Greek Yogurt & Strawberries
Snack: Popcorn
Lunch: Veggie Sausage Skewers
Snack: Watermelon
Dinner: Eggplant Stacks (using chopped bacon stuffed burgers instead of ground pork)

Wednesday, July 6
Breakfast: Burger Egg Muffins
Snack: Popcorn (I like Halfpops)
Lunch: Arugula, Watermelon & Feta Salad
Snack: Yogurt & Berries
Dinner: Pork Chops, Grilled Onions, Sauteed Cruficerous Crunch

Thursday, July 7
Breakfast: Burger Egg Muffins
Snack: Hummus & Veggies
Lunch: Arugula, Watermelon & Feta Salad
Snack: Yogurt & Berries
Dinner: Roasted Chicken, Leftover Veggie Skewers & Brown Rice

Friday, July 8
Breakfast: Burger Egg Muffins
Snack: Popcorn
Lunch: Arugula, Watermelon & Feta Salad
Snack: Yogurt & Berries
Dinner: Beef Stir Fry Zoodles
