Pork, Sweet Potato & Kale Hash

1/2 pound ground pork
1 Cup diced sweet potato
3 Cups Kale
Salt
Pepper
Seasoning of your choice (I use Spice House Ukrainian Village seasoning)
Medium Saute Pan

What You Need To Do
1. Peel and dice the sweet potato and remove kale stems
2. Brown the port and set aside, leave fat in the pan
3. Add sweet potato to pork fat and saute until mostly soft
4. Add pork and season
5. Add kale toward the end and cook until soft

Tips
If you don’t want to use animal fats for cooking, drain the fat and use a small amount of coconut oil to saute the potatoes.

Serves 2; Approx. 408 calories per serving
