What you need
2 Chicken Breasts
1 Cup Mushrooms (I used a pre-prepped gourmet blend that included morels and other fancy-schmancy shrooms)
2 Tbsp Chicken Broth
2 Cups spinach
Salt & Pepper
Grill or Grill Pan
What you need to do
1. Salt & Pepper the chicken breasts, throw them on the grill
2. While the chicken cooks, saute the mushrooms in a little bit of the chicken broth, adding more as the liquid evaporates
3. Create a bed of uncooked spinach on the plate
4. When chicken is finished cooking (to 165 degrees internal temp), place on top of the spinach and add mushrooms
This recipe really is that simple.
For added flavor, use any other seasoning for the chicken you like.
Garlic never hurt a mushroom saute. Add some fresh garlic before the mushrooms hit the pan if you want to up the flavor profile.
The heat from the chicken and mushrooms will wilt the spinach a little. If you prefer your spinach more wilted, add it to the mushrooms just before the mushrooms are finished cooking.
