Mediterranean Quinoa

WHAT YOU NEED
1 Cup uncooked quinoa
2 Cups water
1 Can quartered artichoke hearts
18 Kalamata olives
2 Ounces crumbled feta
Juice of one lemon
Salt & Pepper
Bowl large enough to mix
Pot

WHAT YOU NEED TO DO
1. Cook the quinoa.
2. Drain the artichoke hearts.
3. Chop the olives.
4. When the quinoa is done, combine everything in a bowl and add salt & pepper to taste.
5. Serve alone or with your favorite protein (grilled chicken, pictured above, works well).

TIPS
• If you like more of any ingredient, add it.
• Canned artichoke hearts in water have very little flavor, but are healthier. Use marinated hearts (usually canned in oil) for a bigger pop of flavor.
