Beet, Orange & Arugula Salad With Quinoa

WHAT YOU NEED
1/2 cup Quinoa, uncooked
Packaged beets
Arugula
1 Orange
1 tbsp Olive oil
Juice of 1 lime
1/4 Cup chopped almonds
Salt & pepper to taste
Two bowls – one large for tossing the salad, one small for mixing the dressing
(This picture has leftover grilled chicken. Add that if you want.)

WHAT YOU NEED TO DO
1. Cook the quinoa
2. Slice the beets into chunks of whatever size you want
3. Peel and cut the orange into pieces
4. In a separate bowl, whisk lime juice and olive oil and some salt and pepper for good measure (I threw in some orange juice, but it didn’t seem to change the flavor)
5. Toss all the ingredients together and enjoy

TIPS
• I used pre-packaged beets here because I don’t like peeling and cooking fresh beets, but for sure roasting fresh beets will taste better
• Honestly, this recipe is kind of bland. If you can think of a way to add more flavor, do it!
